I am trying to figure out how to require it so that participants have to enter their email address in a fill-in-the-blank question (or at least enter something that ends with ".com"). How would I go about doing that?

You can use a mask parameter for the .com, but it would be awkward because you'd have to provide a defined number of blanks for the other parts of the email field, e.g., (m**********@**********.***)
Another way to do it would be with a responses.xls file (see Advanced Features) whereby you could use Excel's conditional logic to test the content of the response. If the response is not appropriate, then you can set a skipto value for the item that is it's own variable name. That will prevent the subject from going on until the conditions are satisfied.
Finally, you could create a simple HTML form that prompts the user for their email address. The form could validate the format of the response and insist that it be done correctly. Such code would be easy to find on a google search such as "HTML email address validation" or something like that. In fact, if you search on "validation" on the MediaLab forums, their might even be something like this already posted.
